Well-hopped with malty flavors, bitter ales have a light feel with a straw to copper color. They are similar to American Pale Ales.

AMBER ALES
A style without definition, amber ales range from bland, vaguely caramelly beers to products with a fairly healthy malt and hop balance. Often the differentiation between a quality amber and an American Pale is that the amber might have more dark malt character, or a less assertive hop rate.

STRONG ALES
A catch all category for beers with alcohol contents of 7.0% or higher, some may be as high as 25%. The characteristics will vary greatly with similarities to Barley-wines and Old Ales. Sometimes aged in wood or made to be cellared. Generally served in Belgian style tulip glasses, many are special versions of regular brews.

TRAPPIST AND ABBEY ALES
A belgian style ale often made by Trappist monks. Relatively strong and fruity, it is made with candy sugar in the brewing process. These ales are bottle conditioned. See also Belgian Strong Ales.

PILSNERS
German pilsners typically come in two varieties, the northern and the southern. Southern examples are akin to a Bohemian pilsner with German hops and less malt. Northern examples are very well attenuated (leaner in body) and dry.

RETRO/AMERICAN FACTORY
These beers are made with grain, usually wheat and rice, which are uncharacteristic with most beers. In Germany, these beers are referred to as "wasser" beers, which means watery. Mostly classified as pilsners or lagers, but generally referred to by expert beer drinkers as bottles of water.

PORTERS
Black or chocolate malt gives the porter it's dark brown color. Porters are well hopped and heavily malted. This is a medium-bodied beer. Porters can be sweet. Hoppiness can range from bitter to mild. Porters are often confused with stouts.

BOCK/DOPPELBOCKS
Deep copper to dark brown in color. Medium to full-bodied flavor. Hop flavor and aroma can be light to non-existent. Doppel means double and while these are stronger brews than the traditional German bocks, they are typically not twice the strength. Color is light amber to dark brown. Very full body with a high alcoholic flavor. Low hop flavor and aroma.

LAMBIC
One of the oldest styles of beer style produced today, and one of the most complex. Lambics are wheat beers made with stale hops and fermented with wild yeasts and other microorganisms, traditionally only on the Senne Valley in and around Brussels. The beer is aged from one to three years in wooden barrels. Lambic is ocassionally available unblended from the barrel, but is more commonly found as gueuze, a sparkling, vinous blend of several barrels, or in versions where the beer has been matured with fruit.

Underground Bluz has a policy of not allowing a keg to stay on tap for more than 14 days. By doing so, we ensure that you are getting the maximum quality offered from our taps. CIDERS
Made from fermented apple juice, cider comes in a number of varieties. English cider is dry, with fruity, tannic qualities and low carbonation. This can be found cask-conditioned in England. Normandy is another major cider-producing region, with a sweeter, more effervescent, very complex style. Ciders produced elsewhere are often sweet, simple beverages for mass consumption, though there are some good English-style ciders in North America and Norman-style ciders in Quebec.

Sake, is a Japanese word meaning "alcoholic beverage", which in English has come to refer to a specific alcoholic beverage brewed mainly from rice, and known in Japan as nihonshu (“ú–{Žð "Japanese alcohol"). Sake is a form of rice wine, is predominately from Japan. Ranging in alcohol, from 14%-18%, is a quick way to start or finish off your night. In Japan, most regular, non-flavored sake is served warm. However, the premium sake, which is usually flavored, is served chilled.

Yes, the title of this section is ORGANICS! Organic beers are rare, as the cost to achieve the level of being organic is rather expensive for the brewers. Organic beers contain, USDA Certified Organic ingredients, which in all actuality, make you 'feel' less concerned that you are drinking..I mean come on, it has to be good for you if it's organic.

NON-ALCOHOLIC BEERS
Low alcohol (or Non-alcoholic) beer is beer with very low or no alcohol content. The vast majority of NABs are lagers, but there are some ales. Legally, in the US, beers containing up to 0.5% alcohol can be called non-alcoholic. Although they are called non-alcoholic, they still contain some alcohol and some states have laws which prohibit their sale to minors. In countries where alcohol advertising is forbidden or limited, non-alcoholic versions of many popular brands of alcoholic beverage are created for the purpose of advertisement.
